1 Milk selection.

2 Acidification is the process of making acids.
The acidification process begins when the milk is heated. Adding starter cultures to the milk is usually how this is accomplished. Lactose is converted into lactic acid in these cultures, which helps coagulate the milk and develop flavors.
3 Coagulation:
Rennet is added to the milk to promote the formation of curds. The milk proteins, primarily casein, come together and separate from the whey. The process takes several hours to allow the development of the curds.
4 Cutting and heating.
The smaller pieces of the curds are cut after the procedure. Cutting helps to release more milk and control the amount of water in the cheese. The cheese type will affect the size of the curds. The texture and moisture of the cheese is contributed to by the heated curds.
5 Draining and pressing.
The cheese is shaped by placing the drained curds in molds. The cheese is given a distinctive shape by the molds.
